[WORKSHOP] Gamakoan's Universe | Soba Noodle Making Workshop

Miyakonojo City is located in the Kirishima Basin in Miyazaki Prefecture.
This land, shrouded in morning mist and characterized by large temperature differences between day and night, is known as a place where fragrant, high-quality buckwheat grows.

Gamakouan is a soba restaurant located in the mountains of Kirishima.
We continue to make soba noodles by making use of nature and being sustained by nature, while cherishing the blessings and cycles of the land.

Using locally sourced ingredients as much as possible,
Buckwheat husks and leftover food from the store are reused as chicken feed and compost.
The compost nourishes rice paddies and fields, and the crops grown there become food.

The word that expresses this idea of ​​circulation is,
"Shindo Fuji" (body and earth are one) .

People eat what is harvested in that region and in that season.
This philosophy is alive in the soba noodles made at Gamakoan.

I stop by Gamakoan every time I visit Miyakonojo.
The soba noodles here are really delicious and tender.

Not only is it delicious, but the more you learn about the concept of circulation behind it and its connection to nature, the more you'll want to eat it again.

Once eaten, new life grows and becomes soba noodles again.
